Happy Saturday! I hope you have a fun and relaxing weekend planned. Fall is officially in the air here in Colorado. We had a chilly week, but this weekend is supposed to be in the 70’s and absolutely gorgeous! It is a 3 day weekend here for my son, as it is the end of the quarter/semester with the way they are doing classes this year. Plus we have my nephews 4th birthday party to go to. So it will be a great weekend. And next week we start a new normal, because cross country season is over. As much as I love watching races, I am glad things can slow down a little bit and we can have dinner at a normal time again.

Monday – Soup/Salad/Seafood/Chicken – start the week off with something a little lighter.
Tuesday – Mexican – Tacos, enchiladas and more!
Wednesday – Pasta/Italian – pasta doesn’t have to mean Italian, so look for all sorts of fun dishes.
Thursday – Rice/Asian – recipes from all over the work that are easy to make in your own home.
Friday – Cocktails! Take a night off from cooking and enjoy a fun cocktail to end the week.
Saturday – Anything goes – Mix it up a little bit – breakfast for dinner, casseroles, easy…you name it!
Sunday – Grilling – the weather is nice so try to get out and cook something outside!
